Jeff taught me how to make deviled eggs. Historically, his favorite things to bring to potlucks were deviled eggs and sushi because he said that they were always a hit. And indeed they are. Every time we’ve ever made deviled eggs and sushi and brought them to a gathering, the plates have practically been emptied in a matter of minutes (and that was with me not eating them all in the car on the way there, which took a lot of willpower.)
Recently I made some deviled eggs and felt like sharing our recipe with all of you.
**DEVILED EGGS**
1) First, follow the recipe for making hardboiled eggs here: Hardboiled Egg Recipe
2) Then peel your shells off and cut the eggs in half.
3) Scoop out the yellow insides (tip the eggs over and they’ll usually just fall out with some gentle maneuvering) and put them in a bowl.
4) Mix in some mayonnaise in the bowl.
(I just tried making homemade mayonnaise for the first time and loved it. Here is the recipe if you would like to try it, posted on our friend Lara’s blog: Homemade Mayo Recipe . I didn’t use a food processor to make it, I just whipped it by hand to save doing more dishes.)
5) Chop up a few pickles really small and mix them in with the mayo and egg mix.
We use Jeff’s homemade pickles that he makes with cucumbers from our garden. It gives an incredible flavor to the deviled eggs and just a slight crunch. (This is one of his main secrets to making incredible deviled eggs.)
6) Sprinkle in a little curry powder and cayenne powder (if you like a little spice- yet another secret.)
7) Try it… might need a little salt
7) Spoon your delicious mixture back into the hollow of the egg whites
At this point, you should probably try a few to see what else they need……
You might need to try one more to be sure….

I love deviled eggs! I make mine with honey mustard instead of mayonnaise, it gives them a little kick!
By the way, I just have to say that within a few months of us becoming friends, I am now pregnant with my first child too. I think it’s one of those cosmic coincidences 🙂
