Coming from a chicken lover, it’s not a big surprise that I love eggs. Our generous ladies share so many eggs with us every day and we eat a lot of ’em. We enjoy scrambled eggs, eggs over easy, vegetable quiches (especially with some homemade goat cheese), hardboiled eggs, deviled eggs…… you name it!
This morning I made scrambled eggs with farmer’s market cilantro on top. It’s such a simple thing to make, but so tasty and nourishing. This baby is hungry first thing in the morning. Sometimes I need to make something to eat fast because the baby is hungry now! When this is the case, scrambled eggs are always a good choice because they are so quick to make. They have saved my life on many occasions.
And you can add so many fresh ingredients to scrambled eggs as the seasons change to create delicious meals.
I’m so grateful for eggs, they are a blessing in our lives every single day.
Thank you Angel, Henny Penny, Polly, Redwin, Cedar, Hootie, Chickadee, Gwennie, Princess Buttercup, Goldie and all the other ladies in the backyard- you go girls!

dw- I love that you named them Henny and Penny! How cute! 🙂
I really hope it passes in your city for people to have chickens. I’ll be thinking good thoughts for you!!

Oh, I want chickens so badly! Unfortunately in the city I live in we are not allowed to have chickens in city limits. We tried to get some a year ago & got cited. We had them for about 3 weeks. They were so wonderful & peaceful & we loved them very much. We named them Henny & Penny. 🙂
This August our city will be making their final decision about whether to allow chickens in city limits from now on. If they do I will be getting some again right away.
