Wow, what a treat we had today for lunch!
Yesterday I stood in the kitchen, surrounded by all the gifts from the Farmer’s Market and with these gifts, this delicious salad was created.
This salad was a Farmer’s Market salad (all but the eggs and dressing.)
The kind of meal that makes you savor every bite.
The kind of meal that makes you savor every bite.
The kind of Spring succulence that makes your mouth rejoice!
In a completely different realm than the bland lettuce and hard carrots you get at the grocery store throughout the winter. Trust me, I’m grateful to have produce in the winter, but this salad tastes like what a salad is meant to be.
Adding the Hardboiled Eggs and Lamb Salami (the best Salami I’ve ever had in my life- thank you Deck Family Farm!) makes it a very nourishing lunch that will carry you until dinner. (Even for a pregnant woman like me who is always hungry!) ๐
Feeling so grateful for this Spring Abundance and all the good food that it brings!
Ready to head to your local Farmer’s Market yet? ๐

I’m totally going to try beet kvass with vinegar as a salad dressing and sneak it to my kids that way! Thanks for the good food ideas!
