Well, it’s a good thing I harvested all those nettles since we didn’t make it to farmer’s market today to get our weekly greens. Those nettles are keeping our meals full of healthy green-ness. Thank goodness because we sure love our greens!
I had some questions from readers about what we do with our nettles. This time we stuck half of the harvest in the refrigerator and dried the other half on screens by the woodstove.
Here is a picture of the lunch I made today. I took some of the nettles from the refrigerator and steamed them. Typically, we don’t steam our vegetables that long, but with nettles I like to get them good and steamed for awhile just to be sure there won’t be a sting in the bite! After steaming them, we like to pour some raw apple cider vinegar on top and sprinkle a little salt. They are so good that way!
Today, I served the steamed nettles with scrambled egg yolks. Have you ever tried just scrambling the egg yolks rather than the whole egg? It’s so tasty! It actually tastes like cheese (especially when you sprinkle some salt on) and since we are not eating dairy, having something taste like cheese is a major perk for us!

Another thing we do with the fresh nettles besides eating them steamed, is to add them to soups.
With the nettles that we dry, we use for making tea and for adding to soups (just the leaves, the stems get too hard for soups once you dry them.) We like to dry enough to last us until the following spring when we can harvest again. A warm mug of nettles tea on a winter day is such a treat!!

Kim- I have never sauteed nettles before, but it sounds delicious! Now I am dreaming of sauteeing them with some garlic… you got me all hungry! The olive oil sounds so good to saute them with. And turning them into vitamins is a great idea!

mmm i love nettle. i like using my nettle for tea as well. i’ve encountered various nettle recipes for pesto and frittata which i’d like to try eventually.

I love to lightly saute nettles with olive oil. Just for a short amount of time on low heat. I also love to dry them and drink nettles tea. OR dry them, grind them in the blender and make them into vitamins- (like you did with your placenta.) PURE nutrition. Sooo good for breast feeding mamas and Vegans too.
