I made an inspired, incredibly delicious salad today!
The textures and flavors all blended and complemented each other beautifully. It left my tastebuds zinging. This salad can really wake you up!
I’m so grateful that it’s spring and we have fresh greens to enjoy from the greenhouse. Oh, how I missed those fresh greens from right outside our door!
The Salad:
Salad Greens
Spicy Mustard Sprouts
Pears
Lentils
The Dressing:
Olive Oil
Apple Cider Vinegar
Mustard Powder
Himalayan Crystal Salt
Recently I saw a picture of a salad with fresh raspberries on top. I had enjoyed fruit salads throughout my life, but had never thought of putting fresh fruit on a green salad before. What a fun idea! (I will definitely be putting some raspberries on our salads when they are in season!) So I took some pears and chopped them up. The sweetness was delicious with the spicy sprouts that Jeff had sprouted and the mustard in the dressing. Sweet and spicy are so yummy together. The slight crunch of the sprouts and of the pear really added a lot to the salad too. The lentils added some good protein. The raw olive oil, apple cider vinegar, sprouts, greens, and pears were all bursting with enzymes.
Hooray for salads!

Kelly- I just chopped the pears up. For the lentils, I let them cool to room temp. after cooking them, and then put them on the salad.

Pears? How did you incorporate them? As slivered pieces?
And lentils? Just cold brown lentils in the bowl?
Speaking of fruits in salads… try fresh dark kale and blueberries… YUM!
