I LOVE butternut squash. a lot.
Our oven broke awhile ago. Jeff got the stovetop working again (essential to our daily life) and in our busy-ness, we lived without the oven, which we didn’t use as often. Obstacles in life seem like a great opportunity to get creative and find solutions.
Usually my favorite way to make butternut squash, was to follow this recipe. It was super easy and fast. Well, without an oven, I decided to try it out on the woodstove and it was delicious. Creative discovery number one. With the weather getting nicer, we don’t need a fire on the sunny days. So without the woodstove, I wondered how to make our beloved butternut squash. I wondered about using the crock pot? It’s always going with bone broth these days, but we took a short break from broth-making (just overnight… we need our bone broth!) to fill the crock pot with butternut squash.
We chopped it up into large chunks, put it in the crock pot with water, and cooked it on low overnight. Then the peels came off easily and we strained out all the water that was left. Creative butternut squash discovery number two. We paired it with some homemade, pastured lard and we were in heaven. So, crock pot butternut squash was a success (even though it took a little more time to prepare) and there is more currently going right now…
Bone broths in the crock pot have some competition now. 🙂
I wonder what our next butternut squash discovery will be? I just came across this recipe for butternut squash chips today and I’m curious. But wait, our food dehydrator broke too. Looks like it’s time for more creative solutions! (Or some handy-man time set aside.)

I love your creativity with not having an oven! I rarely use our oven, and could do quite well without it I think. 🙂 In the summer, I like to bake cookies on the stove instead of in the oven so the house doesn’t get so hot!
And I recently re-discovered our crockpot, and think it’s got to be one of the best inventions ever. And for bone broth, it’s just so perfect. I’ll definitely have to try a winter squash in there…or sweet potatoes! Mmm.

It costs little or no money to make, it doesn’t require electricity, and the dang thing is so fun to use! You really can cook just about anything in it. I’m also experimenting with a portable solar oven made from one of those reflective silver windshield things.
