One of the best things about Spring is eating fresh salads again. I’ve had some salad inspirations lately. I saw a salad in a magazine with fresh raspberries on top and it looked so delicious. The idea was revolutionary to me because I had never thought of putting fruit on salad greens before. I thought of fruit salads and green salads as separate things. As it is not raspberry season yet, I wondered about putting some strawberries on our salad. The other salad inspiration came from a salad our friend Christelle made, where she chopped up raw fennel to put on top. It gave a satisfying crunchy texture that reminded me of celery. I had only had fennel as tea before that. I love trying new foods and as a salad addition, I liked it!
So yesterday at farmer’s market I followed my salad inspirations and picked up two spring salad additions- strawberries and fennel!
The farmer’s market Angels were helping me out because I got the very last fennel bulb they had!

Today I took our farmer’s market goodies to make our salad for lunch. It had a mix of salad greens, fresh basil leaves, strawberries and some chopped fennel. For the dressing I used cold-pressed extra virgin olive oil (with all those good enzymes) and ginger kombucha from market (which paired beautifully with the strawberries.) Then I sprinkled some powdered kelp on top (I’ve been getting a strong intuitive feeling that I need more iodine lately.)
Well, it was delicious and we enjoyed our Sunday Spring Salad very much.

I love nasturtium flowers on salads, but ours are not blooming yet. I never tried fresh dill on salad, I’m curious now!

Mmmm! That salad looks so good! I love fruit on my salads, though often forget about it, and have never tried strawberries on top! YUM! And I’ve never had fennel bulb either…sounds like it’s time for me to buy some!

In my salads there are lots of green leaves and I am now adding chopped nasturtium leaves and dill. I love fresh dill, I add it to nearly everything!

I love chopped apples with my salad greens. They go nicely with a dressing made from olive oil and apple cider vinegar.
Also I like dried fruit in my salads, such as slivered prunes, cranberries and goji berries.
I usually also add crispy seeds and crispy walnuts!

Ooo, I love spring salads. We add strawberries to salad greens along with toasted nuts and if we don’t have berries the kids love dried fruit (such as cranberries) added…we just have to remind them to eat the greens. π
