Lunch yesterday.
I took a picture to remember it by.
A bed of lettuce,
completely covered up by:
crispy chicken
fresh-picked peaches and blueberries
cucumbers
carrots
~
drizzled with:
olive oil
and
raw apple cider vinegar
Jeff fried up some pastured chicken (from Deck Family Farm) in some home-rendered lard, to put on our salad for lunch. He fried it until it was all nice and crispy, just the way we like it. I mentioned to him that I had recently seen a recipe for peachy chicken salad that looked really good. He thought it sounded good too and since we had some fresh-picked peaches on hand, he fried one in with the chicken.
Then we filled our bowls with lettuce (from Sweet Leaf farm) and covered it with the crispy chicken, cucumbers from our garden that we harvested that morning, lots of peaches and blueberries, and some carrots on the side (from Sweet Leaf too.)
Now that was a summer salad to remember!
