What inspired you to create your cookbook:
Cooking with Coconut Oil?
Jennifer: I developed a love affair with coconut oil about 3 years ago now. As most everyone remembers, coconut oil was taboo for so long. As I began my journey back towards real foods, coconut oil was one of the first “real fats” I incorporated. I have always loved the taste and smell of coconut so really, coconut oil was the perfect match for me.
I did a lot of research on how coconut oil is manufactured before I made my first purchase. That sort of got the ball rolling on my coconut oil obsession. As I read and learned more about the benefits of coconut oil, I realized just how many people were missing out on its magnificence. As a new blogger who was somewhat chronicling my journey towards better health through real food, I decided to write a post about the uses of coconut oil. I was very new to the blogging world and had no clue that my post would go viral. It seemed like overnight I became the coconut oil guru!
Over the course of the past 2 years, I have learned more and more about coconut oil sharing post after post about its various benefits. (You can find these all on my Coconut Health page). I wanted to take my love of coconut oil to the next level and do more than just write blog posts about it. I wanted to tap into my creative side and combine it with my love of do-it-yourself skincare. Coconut Oil For Your Skin was born! My blog followers were quite excited about this book but after a few months, began pressing me to create a cookbook featuring coconut oil. I would get email after email asking for advice on how to consume more of it throughout the course of daily eating/drinking. While I love cooking and get very inspired to create new recipes, I had never envisioned myself as a cookbook creator. But I love a challenge and I love helping others. So, I took to the kitchen day after day (with the help of my then toddler) and began crafting the recipes that now appear in Cooking With Coconut Oil.
Although my original goal was to inspire people to cook with more coconut oil and give them the recipes to do it, I actually ended up inspiring my own self. I very quickly fell in love with the art of creating a cookbook. Although it is a lot of work, more than I had envisioned, it was a lot of fun. Even my bloopers were enjoyable (although maybe not to eat!)

What makes your cookbook so great?
Jennifer: There are a lot of cookbooks in the world. You name it, you can find a cookbook on it. However, there really are no cookbooks that focus on helping people consume more coconut oil. In addition, all of my recipes of gluten free, most are GAPS friendly, many are dairy free, and many are vegetarian compatible. You won’t get this in any other cookbook. Trust me, I have checked.
In addition to being special diet friendly, my recipes are really easy to make! All of my ingredients are readily available and I even provide a source list so you know what brands of certain ingredients are my favorites. I have packed Cooking With Coconut Oil full of all kinds of great information, even including conversion charts.
I had a panel of over 20 recipes testers and they all helped me make this book great! With their honest critiques, I was able to make recipes that I loved even better. So you aren’t just getting recipes that were tested at home. They have been put through the wringer.
Personally, I think that all of my recipes are very family friendly. My daughter loved most of them and the recipes are customizable. You can add more or use less seasoning to meet your family’s preferences. The recipes are all very flavorful yet not overwhelming to a child’s developing palate.

Have you noticed any changes in your health or the health of your loved ones after increasing your coconut oil intake?
Jennifer: It was funny because I knew nothing about “die off” when I started consuming coconut oil. Instead of starting slowly, I was consuming a good ¼ cup – ½ cup of it per day! I was getting nauseated, getting fatigued, and just kind of feeling foggy a few days after I started chowing down on it. After doing some more research, I learned that if you have never consumed coconut oil and you have a compromised gut or other health issues (which I did) the coconut oil will aid in your body’s ability to shed toxins this resulting in die-off. I cut back and then worked backed up slowly with no issue.
I have battled my fair share of health issues over the past few years but I swear by the powers of coconut oil. I think I would be a lot worse off if I wasn’t consuming it daily! I do know that it has done wonders for my skin. Truly, my skin has never looked better. In addition to that, my family has a history of high cholesterol and consuming coconut oil (along with other quality sources of fat) has kept my once-high cholesterol levels very low. My mom has even had success with her cholesterol levels since starting on coconut oil. I have also noticed that it provides a stable source of energy for me. I am severely sleep deprived due to a daughter with sleep challenges and when I forget to start my day with coconut oil, I find myself dragging along.
Coconut oil is one of those health products that can be rather subtle. You might not notice any big changes in your health and then all of the sudden you realize that indeed, your health has improved. This seems to be the case with me. One thing I do know, I will use it for the rest of my life!
Who would you like to benefit?
Jennifer: I personally think everyone needs to give coconut oil a fair try. Of course if you have a true coconut allergy then you would not want to embark upon a coconut oil regime. However, there is not a person on this planet who is in perfect health. With the way processed foods and pharmaceuticals are pushed on us these days, most everyone has a compromised gut to some degree. I personally just want to offer a resource that anyone can use to add more coconut oil to their diet.
Cooking With Coconut Oil is geared towards the gluten free/paleo/GAPS crowd but there are plenty of recipes that would appeal to anyone. And like I mentioned before, they are very customizable so even someone easing into the real foods lifestyle would be able to enjoy this resource.
I hope to look back in 25 years and say that I played a small role in the health revolution that is upon us. My desire is to put out digestible information about natural health and wellness and this eBook is now a part of that goal.
