It’s scary at first, especially if previously every single meal contained pasta or bread or some kind of gluten or grain food product. I learned that for my body, those foods were setting me up with uncontrollable cravings which caused me to overeat, and as the weeks went by the longer I didn’t eat those foods the better I felt and I realized I was starting to feel at peace with
food. Now I eat and the food is delicious but I don’t feel driven to continue eating until I’m so full that it hurts. Getting back to my friend’s mom, I know there is plenty to eat even when you can’t have
gluten or dairy and I’ve been been sharing recipes on my blog for all these years, all gluten free and most of them dairy-free. My mom and my boss both expressed an interest in my recipes in cookbook format
and that got me to thinking, maybe other people embarking on a similar health journey might find it helpful as well. Of the 113 recipes, there are 28 brand new recipes never seen online. Plus, it’s so much
easier to see the recipes in book format!
Starlene: As I mentioned I have been doing the GAPS Diet and it has been a life changer for me. When I was 30 years old I went on the low fat diet, the first diet I’d been on in my whole life. I was about 20 pounds overweight at the time and while the low fat diet worked and I lost weight, I also came away from it with a lot of fear regarding healthy fats. And a lot of unnatural cravings that I’d never experienced
before in my life. I practiced body acceptance for over a decade and I tried love myself at the size I was, but the truth is that I was extremely unhappy at my weight. Not only that, but I didn’t feel good. I had all these aches and pains, and I truly thought it was just because I was over 40. I thought I had to deal with the weight and the discomfort. I wasn’t about to give up any foods. But then my husband was diagnosed with Ulcerative Colitis and in my desire to help him heal I ordered Gut and Psychology Syndrome by Dr. Natasha
Campbell-McBride and started reading. I really only hoped to gain some energy and stop feeling so depressed. I cried at the drop of a hat back then, and had so much anxiety. Within 14 days I began to
find relief from my symptoms and I was convinced to never look back. I’ve continued to feel better over the years and I don’t see myself ever going back to eating the way I did before. I’m still on my health

Starlene: I want other people to be able to see for themselves that there are plenty of great meals to eat if you can’t have grain and dairy products. I love cooking and I love experimenting and creating in the
kitchen, and I hope that people will find a bunch of new recipes that they and their family will love eating, new favorites that they will want to make a second and third time.
