I’m excited to share this new recipe with all of you! These Coconut Wonder Bars are not technically “bars”, but the name just had such a nice ring to it and that’s what kept popping into my head, so Coconut Wonder Bars it is. They are incredibly delicious, nourishing, and healthy. They make great desserts and snacks. And… they are so simple and easy to make, you’ll be amazed. No cooking, no baking. Just mixing and then putting them in the fridge for a few minutes.
The story behind this recipe is that one night we had finished dinner and were really craving dessert. For our dessert we usually have some fruit, but we were in the mood for something a little different and something special. Jeff headed into the kitchen, asking Bracken and I to stay in the living room while he made a surprise. I wondered what in the world he could be making since we were low on groceries that day and were in need of a trip to town. But I saw a twinkle in his eye and a smile on his face as he headed to the other room, and from seeing that look before, I knew we were in for something good. I heard cupboards and drawers open and shut and before we knew it Jeff was back with us, saying we needed to wait a few minutes for them to finish.
Finish? What was this new creation?
Soon he came out and handed us these little cups of pure yumminess.
They were a hit and we’ve been making them in different combinations ever since.
Today as I brought a few out from the fridge to photograph, Jeff saw me walking past with some and said “oh, can I have one of those?” They were the last three left for the picture at that moment in time, but I told him that some bites taken out of one was more realistic anyway. (And of course he was welcome to eat what he wanted after the pictures were taken.)
The one in the back was a slightly different color because we added some chorella powder to it.

One thing I love about this recipe is that it pairs fruit with something more nourishing- coconut oil. To say that Bracken loves fruit is an understatement. He whines for it, throws tantrums for it, and just generally demands it all throughout the day. (Our wise midwife warned us not to introduce fruit and other sweet foods too soon.) While I love fruit and think it’s a good addition to the diet, I feel too much fruit can be harmful. (If I let Bracken eat as much of it as he wanted to, he would make himself sick.) Most of the time we hold off on giving Bracken fruit until after he has had a nourishing meal. I feel really good about giving Bracken these Coconut Wonder Bars because he gets his fruit treat in a very nourishing form, to help give it some more balance. He is so sensitive and can react to too much fruit as many children react to too much sugar. Adding the coconut oil to the mix can help keep him grounded to the earth.
Inside this one: dried blueberries, shredded coconut, coconut oil, chorella and a little bit of ground dates.
How To Make Coconut Wonder Bars
1) Find a container.
We’ve been using muffin tins. They work great.
2) Mix in your ingredients.
We love to use dried fruit, shredded coconut, and a touch of ground dates.
3) Pour coconut oil over the top.
(If your coconut oil is solid you can just run it under warm water to melt it.)
4) Cool in the refrigerator or freezer.
Your coconut oil will harden when it cools.
Then pop them out of the mold with a knife and enjoy!
That’s it.
I told you it was easy.
This recipe is a great one for kids to help with. Bracken really enjoys helping us make these. Plus they get instant gratification since they are ready to eat so quickly.
My favorite fruit to use in these are dried blueberries. We bought some from McKenzie River Farm‘s booth at the farmer’s market (a place we went blueberry picking last summer.) We’ve also used raisins, which cost less. For my taste, the raisins are a little too sweet and the blueberries are just perfect. You can use any sort of dried fruit. If you were going to be eating the Coconut Wonder Bars soon, you could use fresh fruit. We sprinkled some ground dates in each one, which is really delicious, but honestly the added sweetness is not really needed. I think I’ll leave it out next time.
The coconut oil we used is from Tropical Traditions. I had been wanting to try their coconut oil for a long time, I had heard so many wonderful things about it. Many suggest increasing your amount over time. Also, if your body isn’t used to digesting healthy fats, it will take some adjusting with time.
The fun thing about this recipe is how versatile it is!
