Another activity we wanted to do before the frost came, besides searching for mushrooms, was to harvest all of the winter squash still left in the garden. On our drive to town today for our class at the Waldorf school, there was frost in Eugene. It hasn’t happened at our house yet (closer to the coast), but we’re glad we got the squash harvested. We would have liked to let them ripen further of course, but the nice thing about winter squash is that it’s not a big deal if it doesn’t. We planted our winter squash late this year and weren’t expecting much from it. So even a small harvest, like we have this year, feels like a bonus to us. Most of the winter squash we grew this year is butternut squash, which is a favorite of ours.
We’ve cooked it on the wood stove and in the crockpot, but our favorite way to prepare it is to bake it like this.
