Throughout the week I’ve felt grateful for:
…Jeff and Bracken’s favorite type of iris blooming in the garden. We have different color combinations that come up each year, and there is one kind they particularly like.
.
…Ice cream at the end of a long, hot day. Creamy coconut milk and refreshing mint are a wonderful combination.
.
…Crossing things off my to do list. Some days I get a lot more things crossed off my list than others, but each and every thing I cross off is satisfying.
.
…My friend (who was my best friend in high school) having a baby girl. I’m so happy for them.
.
…Jeff making wild cod for dinner with a ghee, garlic, and lemon sauce. Yum! (The next morning I used the leftover sauce on some sauteed spinach and it was amazing on that too.)
.
…My sister and brother in law moving into their new house! She called while they were packing up boxes and I wished I was there to help them move it all over, but I’m so grateful that they do have help with moving.
.
…Slicing plantains, covering them in coconut oil and baking them on low in the oven. They got a bit overdone, but they were still delicious and plantain chips made for a great snack on the go.
.
…Warm days and open windows, with a fresh breeze blowing through. I love the fresh air coming into the house and I also love being able to listen to the birds.
.
…All the organizing Jeff got done in his shop, and what a difference it made.
.
…Experimenting in the kitchen and trying new things. It’s amazing how even something as simple as a new dressing can change a meal from same ol’ to fresh and exciting.
